Ingredients
- 600g baby potatoes
- 1 tbsp olive oil
- 130g pack diced chorizo
- 6 shallots, sliced
- 30g flat-leaf parsley, chopped
If you haven't got any baby potatoes, try dicing a large white potato instead

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Mix the potatoes with the olive oil; season and roast for 50 mins.
- Dry-fry the chorizo and shallots for 10 mins, stirring until caramelised.
- Squash each potato with the back of a spoon and pile into a serving dish with the chorizo mix. Scatter with chopped parsley.
