Ingredients
- 400g Tesco Finest brioche loaf, cut into 8 slices
- 100g 50% less-fat soft cheese
- 1 medium vine-ripened tomato, thinly sliced
- 120g pack smoked salmon, sliced
- 1 small red onion, thinly sliced
- 1 tbsp capers
- 10g fresh dill, chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Place the brioche slices on a rack set over a baking tray and bake for 5-7 mins until golden.
- Arrange on a serving platter and spread 4 slices with soft cheese. Divide the tomatoes, salmon and onion between them and top with the capers and dill.
