Treat your loved one to breakfast in bed with this super speedy Valentine's Day idea. Layer crisp toast with whipped cheese flavoured with thyme, add sticky-sweet honey bacon and a good pinch of chilli, and serve. Ready in just 10 minutes and totally delicious, there's no excuse not to! See method
Ingredients
- 4 smoked streaky bacon rashers
- 4 tsp clear honey
- 100g soft cheese
- 1 tsp chopped fresh thyme leaves
- 2 thick slices of sourdough, toasted
- good pinch of crushed chillies (optional)
- a few Little Gem lettuce leaves, to serve

Method
- Preheat the grill to high. Arrange the bacon on a rack, brush with 2 tsp of the honey, then grill for 3-4 mins until golden and crisp.
- Meanwhile, use a fork to whip the soft cheese in a bowl with half the thyme and some seasoning.
- Thickly spread each slice of toast with the whipped cheese, then top each with 2 rashers of bacon. Sprinkle with the remaining thyme and the crushed chillies (if using). Drizzle over the remaining honey and serve with the lettuce leaves.
