For a quick and easy meal, knock up this spanish pasta salad in under 20 minutes. With a garlic, paprika and lime juice dressing, and chopped crunchy peppers, juicy spring cherry tomatoes and spring onions, this lunch hits all the right notes. See method
Ingredients
- 300g Tesco Free From fusilli pasta
- 4 spring onions, trimmed and roughly chopped
- 1 red pepper, deseeded and cut into cubes
- 1 green pepper, cut in half, deseeded and roughly chopped
- 1 red chilli, seeded and finely chopped
- 200g cherry tomatoes, halved
For the dressing
- 4 tbsp olive oil
- 2 garlic cloves, crushed
- 1 lime, juiced
- ½ tsp smoked paprika
- 100ml tomato juice
If you haven't got fusilli, try using penne or another short pasta

Method
- Bring a large pan of water to the boil and cook the fusilli according to package instructions; drain and set aside. Make the dressing by combining all the ingredients together and season to taste.
