Ingredients
- 1kg Jersey Royal potatoes
- 50g unsalted butter, at room temperature
- 10g fresh parsley, leaves picked and roughly chopped
- 10g fresh mint, leaves picked and roughly chopped
- 3 spring onions, finely sliced
- 1 garlic clove, crushed
- ½ lemon, zested
If you haven't got any new potatoes, try dicing a large white potato instead

Method
- Wash and lightly scrub the potatoes, taking care not to remove any of the skin. Lightly pierce all over with a fork, then transfer to a microwave-safe bowl. Add 2 tbsp water, cover and microwave on high* for 10-12 mins, pausing to stir every 3-4 mins until tender. Drain any excess water.
- Mash the butter with the chopped herbs, spring onions, garlic, lemon zest and some seasoning. Stir through the potatoes to serve.
Tip: Use whichever soft herbs you like – basil or thyme would also work. To make this vegan, swap the butter for 2 tbsp extra-virgin olive oil.
