This speedy sweet chilli sauce is hot and fiery, and goes great with prawn crackers See method
Ingredients
- 60ml rice wine vinegar
- 60g caster sugar
- 1½ tbsp fish sauce
- 2 small crushed garlic cloves
- ½-1 tsp crushed chillies (to taste)
- ½ tbsp cornflour
- prawn crackers (optional)

Method
- Put rice wine vinegar, caster sugar, fish sauce, garlic cloves, crushed chillies (to taste) and 2 tbsp water in a small saucepan. Bring to a boil over a medium-high heat. Reduce the heat and simmer for 10 mins until roughly reduced by half and slightly syrupy.
- In a small bowl, mix cornflour with 2 tbsp water. Add to the pan and simmer for 2-3 mins until thickened. Pour into a serving bowl and leave to cool before serving with prawn crackers, if you like.
