Ingredients
- 1 small head red cabbage
- 2 tbsp olive oil
- 1 medium red onion, cut into half moons
- 1 tsp cumin seeds, roughly crushed
- 1 tsp coriander seeds, roughly crushed
- 1 cinnamon stick
- 3 tbsp soft brown sugar
- 75ml red wine vinegar
- 200g whole peeled chestnuts (vacuum-packed)
If you don't have red onions, try using white, brown or spring onions

Method
- Core and slice the cabbage. Heat the oil in a large pot. Add the onion and cabbage and sauté for 10 minutes. Season to taste.
- Add the spices, sugar and vinegar, and stir well. Cook on a low heat for 15 minutes, then add the chestnuts and cook all together for a further 10 minutes.
