Spicy glazed chicken with a curry salad dressing recipe

Ingredients
- 50g butter, melted
- 2 tbsp clear honey
- 2 tsp mild mustard
- 2 tsp ground turmeric
- 2 tsp ground cumin
- 1 garlic clove, grated
- 1 tsp grated fresh ginger
- ½ tsp chilli flakes
- 4 chicken breasts
- mixed salad, to serve
For the dressing
- 4 tbsp Greek yogurt
- 2 tbsp mango chutney
For the sauce
- 2 tsp mild curry powder
- 1 lemon, juiced

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the melted butter in a baking dish with the honey, mustard, turmeric, cumin, garlic, ginger and chilli flakes and add some salt and pepper to taste. Stir well.
- Make 3 slashes into the side of each chicken breast about 5mm (1/4in) deep, to allow the flavours to penetrate the meat. Add the chicken to the baking dish and turn to coat on all sides with the spicy mixture. Bake for 20-25 minutes, turning halfway, until the chicken is golden brown and cooked through with no pink meat remaining.
- Mix all the dressing ingredients together in a bowl and pour over a prepared salad to serve.
