Steak and chips, but not as you know it. Featuring baked herby potatoes and purple sprouting broccoli along with peas, leaves and radishes, this is a nutritious twist on a dine-at-home favourite. See method
Ingredients
- 750g new or baby potatoes (we used Jersey Royals), quartered lengthways
- 1½ tbsp vegetable oil
- 4 thyme sprigs, leaves picked
- 200g pack purple sprouting broccoli, large stalks halved lengthways
- 2 x 255g packs rump steak
- 100g frozen peas
- 90g pack rocket & babyleaf salad
- 100g radishes, halved and sliced
For the mustard dressing
- 3 tbsp olive oil
- 1½ tbsp red wine vinegar
- ½ tsp wholegrain mustard
- 1 small garlic clove, finely chopped
- ¼ tsp caster sugar
- 5g fresh tarragon, leaves finely chopped
If you haven't got any baby potatoes, try dicing a large white potato instead

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes on a large, shallow baking tray with ½ tbsp oil, the thyme leaves and some seasoning. Toss to coat, then roast for 30 mins. Toss the broccoli with another ½ tbsp oil and arrange on top of the potatoes; roast for another 10 mins, or until golden and turning crisp. Meanwhile, remove the steaks from the packaging and allow to rest at room temperature for 20 mins.
- Heat a large griddle or frying pan over a medium-high heat. Brush the steaks with the remaining oil, season, then sear for 2 mins each side (for medium-rare) or 3 mins each side for medium. Leave to rest for 10 mins before slicing.
- Boil the peas for 2-3 mins until tender. Drain, rinse under cold water and set aside.
- Put all the dressing ingredients in a jar with a tight-fitting lid, then shake well to combine. Arrange the rocket salad, radishes and peas on a serving platter, along with the roasted potatoes and broccoli. Add the sliced steak and drizzle over the dressing to serve.
