These fun fajitas are made with delicious stir-fried juicy steak, peppers, and shallots. Simply stir-fry in a wok, then serve with warm tortilla wraps and cheddar, guacamole, sweetcorn, salsa and sour cream. What a treat! See method
Ingredients
- 8 plain tortilla wraps
- 2 sirloin steaks, fat removed, cut into thin strips
- 2 shallots, finely sliced into rounds
- 2 red pepper, deseeded and finely sliced
- ½ tbsp Cajun seasoning
- 163g guacamole
- 200g salsa
- 150ml fresh soured cream
- 200g mature cheddar cheese, grated
- 200g tinned sweetcorn, drained
- 200g cherry tomatoes, cut in half
- 2 tbsp extra virgin olive oil
If you don't have sour cream, use crème fraîche or yogurt

Method
- Get all your extras ready first laid out on the table in bowls, so that's the sweetcorn, guacamole, sour cream, salsa, cheese and cherry tomatoes.
- Heat the oil to high in a wok or large frying pan, whilst that’s coming up to heat mix the shallots, peppers and steak with the Cajun spice and 1tbsp of oil. Then add to the wok and stir fry for 2-3 minutes. Remove onto a warmed plate and place with your other sides.
- Remove the tortilla wraps from their packaging and warm them in the microwave for 1 minute. Tuck in and enjoy any combination you fancy.
