Stir-fried peas with smoky peppers recipe

Add some Spanish flair to a simple side dish with smoky peppers, chickpeas and caramelised red onion alongside sweet peas, for a colourful and easy side ready in just 10 minutes. See method
Ingredients
- 1 red onion, sliced
- 2 tsp olive oil
- 2 tsp smoked paprika
- 400g frozen peas
- ½ x 285g jar chargrilled peppers,drained and sliiced
- 1 x 210g tin chickpeas, drained
- 50ml water
- 15g coriander, chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Fry the red onion in 1 tbsp olive oil for 10 mins until soft; add the smoked paprika for the final 2 mins.
- Meanwhile, boil the frozen peas in salted water for 6 mins; drain and add to the onion with the chargrilled peppers, chickpeas and some water. Heat until piping hot. Stir in the chopped coriander.
