Make the most of in-season British strawberries with this super summer dessert. Fresh strawberries and creamy white chocolate is a match made in heaven and this easy-to-make mousse is a simply delicious way to marry the two flavours. See method
Ingredients
- 2 x 227g packs strawberries, 4 reserved, the rest trimmed and quartered
- 40g icing sugar
- 1 tbsp lemon or lime juice (optional)
- 70g white chocolate, 50g finely grated
- 300ml pot whipping cream
- 6 small fresh mint sprigs, to serve (optional)
If you don't have any limes, try a lemon instead

Method
- Put the quartered strawberries in a food processor or blender with the icing sugar and lemon juice, if using, and blitz to a smooth purée. Add 1 tbsp to each serving glass and set aside.
- Put the grated white chocolate in a mixing bowl with the whipping cream and remaining strawberry purée, then whip to stiff peaks. Divide between the glasses, then transfer to the fridge for at least 1 hr (or up to 12 hrs) to set.
- To serve, halve the reserved strawberries and use a vegetable peeler to peel the remaining chocolate into small curls. Use to top the mousses, then add a mint sprig to each glass, if you like.
