Zesty orange brings refreshing flavour to this crunchy, colourful slaw, while yogurt adds a delicate creaminess. This wonderfully simple side will look and taste great at any summer party or barbecue. See method
Ingredients
- 2 tbsp grainy mustard
- 1 orange, zested, plus 2 tbsp juice
- 125g (4oz) natural yogurt
- 2 tbsp extra-virgin olive oil
- 3 tbsp chopped basil
- 200g (7oz) celeriac, julienned
- 1 raw beetroot, julienned
- 2 carrots, julienned

Method
- Combine the mustard, orange zest and juice, yogurt, oil and basil in a large bowl. Season well.
- Add the veg and toss to coat. Cover and chill for at least 1 hour or for up to 24 hours to allow the flavours to infuse. Toss again before serving.
