Sweet and sour red cabbage with apple recipe

This vibrant and hearty dish is a lovely pairing of red cabbage and sweet apples. It's a fantastic way to brighten up your meals and use leftover ingredients. See method
Ingredients
- 1 small head red cabbage, cored, sliced 2cm (3/4in) thick
- 1 onion, sliced
- 2 apples, peeled, cored and thickly sliced
- 2 tbsp extra-virgin olive oil
- 4 tbsp cider vinegar
- 2 tbsp soft brown sugar
- 1 lemon, zested
- 1 small orange, zested
- 1 tsp cumin seeds, roughly crushed
- 1 tsp coriander seeds, crushed (or 1 tsp ground coriander)
- 2 tbsp flat-leaf parsley, roughly torn

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put all the ingredients, except for the parsley (reserving some lemon zest for garnish), in a large roasting tin and toss to combine. Season with 1 tsp salt and some freshly cracked black pepper. Cover with foil and roast for 15 minutes.
- Remove the foil and return to the oven for 10 minutes, or until the cabbage is tender. To serve, transfer to a serving dish and scatter over the parsley and remaining lemon zest.
