Sweet cabbage slaw with ginger and sesame recipe

A crisp, colourful slaw of red cabbage, carrot and fennel, coated in a sweet and spicy sesame dressing. See method
Ingredients
- ½ red cabbage, finely shredded
- 2 large carrots, coarsely grated
- 1 fennel bulb, finely shredded
- 3 tbsp sesame seeds, toasted
For the dressing
- 3 tbsp sesame oil
- 2.5cm (1in) piece ginger, finely grated
- 1 lime, zested and juiced
- 1 tbsp maple syrup or stem ginger syrup (from the jar)
- ½ tsp ground ginger
If you don't have any limes, try a lemon instead

Method
- In a large serving bowl, combine the cabbage, carrot and fennel.
- In a jug, whisk the sesame oil, ginger, lime juice and zest, maple syrup or ginger syrup, ground ginger and some seasoning. Pour it over the vegetables and toss to coat. Scatter over the sesame seeds. Leave to infuse, at room temperature, for 30 minutes. Serve with the Pulled pork wraps.
