Ingredients
For the salad dressing
- 3 tbsp sweet chilli sauce
- 2 tbsp lime juice
- 2 tbsp sesame oil
For the pork and salad
- 2 tsp fish sauce
- small handful coriander, chopped
- 1 garlic clove, chopped
- 4 pork chops or steaks
- 1 small cucumber cut into 3cm pieces
- 1 mango cut into 3cm pieces
- 1 small red onion, sliced into thin half moons
- boiled rice, to serve
If you don't have any limes, try a lemon instead

Looking for South East Asia on a plate? Give your pork chops a Thai makeover with this salad featuring sweet mango, sesame oil and cucumber. Sweet chilli sauce is the key ingredient here, adding warmth and spice to the both salad dressing and pork.
- To make the dressing, mix the sweet chilli sauce, lime juice and 1 tablespoon of the sesame oil in a bowl, stirring to combine.
- Take 1 tablespoon of the dressing mixture and put it in a separate bowl, then add the fish sauce, remaining sesame oil, half the coriander, the garlic and the pork and toss so the meat is well coated.
- Preheat the grill. In a serving bowl, mix the cucumber, mango, onion and remaining coriander. Grill the pork for 2-3 minutes on each side, until cooked through. Dress and season the salad and serve with the pork, along with some rice, if you like.
