Chocolate fans will love these simple tiffin truffles. Ready in 30 minutes and combining crunchy shortbread, sweet bursts of raisin and smooth milk chocolate, they're ideal for making at any festive party. Store them in the fridge to keep that melt-in-the-mouth texture. See method
Ingredients
- 200g Finest milk cooking chocolate
- 100ml double cream
- 50g unsalted butter
- 100g all butter shortbread biscuits
- 75g raisins
- 100g icing sugar

Method
- Finely chop the chocolate and tip into a large bowl. Put the cream and butter in a saucepan and heat gently until the butter melts and the cream reaches simmering point. Remove from the heat and pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture.
- Crumble the shortbread and stir into the chocolate mixture. Add the raisins and stir again. Chill in the fridge for 2 hrs until firm.
- Scoop out teaspoons of the mixture and roll with your hands into cylinders about 3cm long and 1cm wide. Set aside in the fridge for about 30 mins to firm up.
- Sift the icing sugar and lightly dust over to create a fallen snow effect. Store in the fridge for up to 4 days.
