Juicy vine tomatoes and red onions give a delicious brightness to your plate. This is a great side dish for picnics and barbecues, and can even double-up as a burger topping. See method
Ingredients
- 1 red onion, halved and very finely sliced
- 2 tbsp red wine vinegar
- 1 tsp caster sugar
- 300g vine tomatoes, sliced
- 3 tbsp olive oil
- 1 tbsp capers, rinsed and drained
If you don't have red onions, try using white, brown or spring onions

Method
- Mix the onion, vinegar, sugar and a pinch of salt in a bowl. Set aside for 10 mins.
- Arrange the tomatoes on a platter. Add the oil and capers to the onions; stir to mix well. Pour the mixture over the tomatoes to serve.
