These simple tortilla dippers are easily assembled and perfect for a last-minute picnics. Top a ready-made Spanish tortilla with sundried tomatoes and olives for the ultimate Mediterranean-inspired bite. Serve with your favourite dip, we recommend salsa and aioli. See method
Ingredients
- 500g Spanish-style tortilla
- 150g pack green olives with slow-roasted tomatoes
- 100g salsa
- 100g aioli
- 5g fresh parsley, roughly chopped

Method
- Slice the tortilla into 16 even wedges. Tear the tomatoes into 16 pieces. Use a cocktail stick to skewer an olive, a piece of tomato and a wedge of tortilla. Serve with salsa and aioli for dipping, then scatter over the chopped fresh parsley, if you like.
Tip: Serve any leftover dip with crudités.
