Ingredients
- 1 x 160g tuna chunks in spring water, drained
- 1 small red onion, finely chopped
- 220g cherry tomatoes, quartered
- 15g fresh flat-leaf parsley, finely chopped
- 1 tsp sugar
- 1 red chilli, finely chopped (optional)
- 1 lemon, zested and juiced
- 2 tsp olive oil
- ciabatta, halved lengthways and lightly toasted, to serve
If you don't have red onions, try using white, brown or spring onions

Method
- In a large bowl, mix the tuna, onion, tomatoes, parsley, sugar, chilli and lemon zest and juice.
- Season, then stir in the oil. Tip into a lidded container, cover and chill until ready to eat.
- Spoon the tuna onto the toasted ciabatta to serve.
