Turkey meatballs with fruity couscous recipe

Use turkey mince to make delicious meatballs. Serve with fruity couscous and a dollop of Greek yogurt for a super quick and easy midweek meal. See method
Ingredients
- 500g turkey breast mince 2% fat
- 1 tsp curry powder (optional)
- ½ onion, grated
- 1 tbsp vegetable oil
- 300g dried couscous
- 40g raisins
- 1 vegetable stock cube, made up to 500ml
- 2 medium carrots, coarsely grated
- 1 Braeburn apple, finely chopped
- ½ pepper, finely chopped
- 60g baby leaf salad
- Greek-style yogurt, to serve (optional)

Method
- Put the turkey mince in a bowl and season well with salt and black pepper. Add the curry powder and grated onion and mix well. Divide the mixture into 16 and roll into balls.
- Heat the oil in a large frying pan with a lid. Add the meatballs and cook covered over medium heat, shaking the pan regularly for 10-12 mins or until browned all over and cooked through.
- Meanwhile, put the couscous into a large bowl along with the raisins. Pour over the hot vegetable stock and cover the bowl; stand for 10 mins to soak.
- Fluff the couscous with a fork and stir through the grated carrot, chopped apple and pepper.
- Set aside about 400g of the couscous salad for lunches tomorrow. Divide the rest of the couscous between 4 plates and top each with 4 meatballs, adding a small handful of salad leaves to each plate and a dollop of yogurt, if you like.
