Nothing can beat a leftover turkey sarnie with cranberry sauce. This is made even more indulgent with the addition of Brie cheese and mayonnaise. Enjoy! See method
Ingredients
- 3 slices brown or white bread
- 1 tbsp cranberry sauce
- 1 tbsp light mayonnaise
- 1 tsp unsalted butter, softened
- 40g (1 1/2oz) Cornish Brie, thinly sliced
- 1 tbsp roasted salted pistachio nuts
- 75g (3oz) turkey breast, sliced
- 5g peppery baby leaf rocket salad
If you haven't got any white bread, try using brown instead

Method
- Lightly toast the bread. Spread one slice with the cranberry sauce, one slice with the mayonnaise and one slice with the butter.
- Top the cranberry sauce with the Brie, then top the mayonnaise with a scattering of pistachios, the turkey slices and a handful of salad leaves.
- Place the slice of buttered toast on top of the salad leaves, then carefully place the Brie and cranberry slice over the plain toast.
- Cut in half and secure with cocktail sticks to serve.
