Turkey satay stir-fry with pilau rice recipe

Throw together a super-quick stir-fry with this turkey satay recipe which is ready in just 15 minutes. This midweek meal is not only easy to make but it's also healthy and dairy-free, too, made with lean turkey breast meat and fresh veg. Serve with rice to soak up all the deliciously nutty satay sauce. See method
Ingredients
- 1 tbsp vegetable oil
- 1 x 400g pack turkey breast strips
- 200g fine beans, trimmed and halved
- 1 orange pepper, seeded and sliced
- 1 x 120g packs satay stir-fry sauce
- 2 x 250g pouches pilau basmati rice
Basmati rice can always be swapped for long-grain

Method
- Heat 1 tbsp vegetable oil in a large wok over a high heat and add the turkey breast strips. Cook for 3 mins, stirring, until lightly golden. Add the fine beans and peppers and continue to stir-fry for 5 mins, or until softened.
- Pour in the satay sauce and 100ml water, and continue to cook for 1-2 mins, until the sauce is thick and the turkey is cooked through.
- Heat the rice according to pack instructions. Season the turkey mixture, then serve with the rice.
Tip: For a two-toned rice, use one pouch of pilau basmati rice and one pouch of basmati rice.
