Method
- Put the coconut milk, maple syrup, vanilla and strawberries in a blender and blend until smooth.
- Divide the mixture between 8 x 80ml ice lolly moulds, insert lolly sticks and freeze for 4-5 hrs or until firm.
- To remove the lollies, run the moulds briefly under hot water, then twist and gently pull them out.
Tip: Swap the ingredients for what you have to hand: honey can be used instead of maple syrup, or use Greek yogurt instead of coconut milk (but the ice lollies will no longer be vegan).
