Try this quick and easy salmon recipe with a packed-with-flavour crust made with za'atar, breadcrumbs, lemon and thyme. Serve with a leafy green salad, roasted vegetables or herby couscous. See method
Ingredients
- 4 tbsp fresh breadcrumbs (roughly 25g)
- 1 tbsp za’atar
- 1 lemon, zested
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh thyme leaves
- 4 salmon fillets
- 1 spring onion, finely sliced

Method
- Preheat the oven to 200°C, fan 180°C, gas 6. Put the breadcrumbs in a bowl and mix with the za’atar, lemon zest, oil, thyme and a grind of black pepper until combined.
- Place the salmon fillets on a baking tray, pat dry with kitchen paper and top with the breadcrumb mixture. Bake for 12-15 mins until the salmon is cooked through and the topping is golden and crisp. Scatter over the spring onions and serve.
