Harissa mussels recipe

If you love seafood, try this mussels recipe featuring ready-prepped mussels and a spicy, tomatoey harissa broth. Serve with crusty baguette to mop it all up – a quick and easy dinner for two. See method
Ingredients
- 1 tbsp extra-virgin olive oil, plus ½ tbsp extra to drizzle, if you like
- ½ onion, finely chopped
- 2 garlic cloves, finely chopped
- 400g tin chopped tomatoes
- 2 fresh thyme sprigs
- 1 tbsp harissa paste
- 500g pack garlic Scottish mussels
- 2 tbsp chopped dill, plus extra
- crusty baguette or baton (optional)
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method
- Heat the oil in a lidded, heavy-based saucepan over a medium heat and fry the onion for 10 mins. Add the garlic, cook for 1 min, then tip in the chopped tomatoes, thyme, harissa and a little water and gently simmer over a low heat for 10 mins.
- Add the mussels, cover, then simmer for another 5 mins. Remove the thyme sprigs, stir in the chopped dill, then serve with crusty bread, a drizzle of olive oil, if you like, and the remaining dill.
