  1. Thai tofu and red cabbage rice bowl

    Kickstart your meat-free week with this vibrant tofu rice bowl. Ready for the dinner table in under half an hour, aromatic rice is topped with flash-fried tofu, mangetout and red cabbage. A sprinkle of peanuts over the top adds crunch, while a squeeze of lime finishes this healthy vegetarian dinner.

  2. Vegan green bean curry

    Packed with green beans cooked in a spiced tomato base, this quick and simple vegan curry takes just 30 minutes to make. All you need to do is fry the spices and curry paste, before adding the beans and tomatoes. Once softened, serve with a scattering of fragrant coconut chunks and a side of rice.

    Make sweetcorn the star in this spicy meat-free burger recipe. Blitz sweetcorn and chickpeas together with coriander, spices and flour and shape into patties. Cook in a frying pan for 10 minutes, before serving in a roll with lettuce and tomatoes for a winning Thursday night dinner.
