1. Bring a large pan of water to the boil and cook the pasta according to packet instructions. Drain, reserving 75ml of the cooking water and return to the pan.
2. Meanwhile, heat the oil in a large frying pan over a high heat. Add the peppers and fry for 5 mins, tossing occasionally, until lightly charred and starting to soften. Reduce the heat to medium and add the Piri Piri sauce (3-4 tbsp depending on how hot you like it), soft cheese, the chicken and pasta cooking water to the pan. Stir for 2-3 mins, allowing the soft cheese to melt, until you have a glossy sauce.
3. Add the sauce to the drained pasta and vigorously mix until evenly coated. Season to taste with freshly ground black pepper and serve immediately.
Tip: Simply half the ingredients and follow the same method if serving 2.
