Air-fryer meatball kebabs recipe

Bring the summer sunshine indoors with these quick and easy meatball kebabs, glazed with hot honey for extra zing. No need for a BBQ when you have an air-fryer! See method
Ingredients
- 12 beef meatballs
- 4 spring onions, trimmed and cut into 3cm lengths
- 1 red pepper, deseeded and cut into 3cm chunks
- 1 green pepper, deseeded and cut into 3cm chunks
- 3 tbsp clear honey
- 1 tsp dried chilli flakes
- 1 tsp apple cider vinegar
- 2 thyme sprigs, leaves picked (optional)
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Trim the wooden skewers to fit in the air-fryer, if needed.
- Thread the meatballs, spring onions and peppers onto the skewers, alternating the ingredients.
- Put on the shelf of an air-fryer and cook at 200°C for 12-15 mins until the meatballs are golden and cooked through, and the vegetables are lightly charred.
- Meanwhile, in a small pan, mix the honey and chilli together. Warm over a medium heat for 2 mins, then stir through the cider vinegar and set aside to infuse.
- Using a pastry brush, glaze the meatballs and vegetables all over with the hot honey, then sprinkle with the thyme to serve.
Tip: To cook under the grill, preheat to high and cook for 10-15 mins, turning halfway through until the meatballs are cooked through.
