'Loose-leaf teas can be a great addition to a cocktail maker’s ingredients shelf', explains drinks writer Miriam Nice. 'The tea adds bitterness, tannins and some depth to drinks, which means you can reduce the quantity of neat spirit used. Less booze, less sweetness but without comprising on flavour – it’s a win-win.’ We think you'll love this tea twist on the classic old fashioned. See method

Method
- Put the tea leaves in a cup, add 30ml boiling water and steep for 1 min. Strain, then stir in the sugar. Leave to cool to room temperature.
- Pour the sweetened tea into a mixing glass and add the bourbon whiskey, Angostura bitters and a handful of ice cubes. Stir for 30-45 secs, tasting occasionally, until your preferred dilution is reached.
- Fill a tumbler with fresh ice cubes and strain the cocktail into it. Twist 1 strip of orange peel to release some of the fragranced oils, then drop the zest into the drink to serve.
