Ingredients
- 500g plums
- 75g light muscovado sugar
- 50g butter, cubed
- 125g self-raising flour
- ½ tsp baking powder
- 75ml milk
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method
- Preheat oven to gas 4, 180°C, fan 160°C.
- Put 2 plums aside, halve the remaining plums and stone them. Cut into quarters and divide between four ramekins, filling them generously. Sprinkle with 25g of the sugar and add 2 tablespoons of water.
- In a bowl place the remaining sugar, butter, self-raising flour and baking powder and rub together with your fingertips until it resembles breadcrumbs.
- Make a well in the middle of the mix, pour in the milk and mix to form a ball, knead briefly until smooth.
- Divide into four and roughly shape to fit the top of the ramekins and place on top.
- Cut the reserved plums in half and remove the stone. Top each dish with half a plum, pushed into the mix, and bake in the oven for 25-30 minutes, until golden on top.
