Bagels are a firm favourite and make for a great lunch any day of the week. Lather with cream cheese and top with crispy bacon and char-grilled tomatoes. See method
Ingredients
- 5ml (1tsp) vegetable oil
- 4 rashers unsmoked back bacon
- 1 tomato, thickly sliced
- 2 plain bagels, halved
- 40g (1 1/2oz) extra-light soft cheese
- pinch black pepper

Method
- Heat the oil in a large non-stick frying pan and add the bacon. Cook for 2-3 minutes on each side until golden. Add the tomato slices and cook for 1 minute on each side until slightly charred and softened.
- Meanwhile, lightly toast the bagels under the grill for 1-2 minutes on each side.
- Spread the base of each bagel with the cream cheese and add a sprinkling of black pepper. Cut the bacon rashers in half and lay over the cream cheese. Top with the sliced tomato and remaining halves of the bagels. Serve immediately.
