Baguette pizza melts recipe

Serve up an easy take on a pizza for a family lunch or TV snack with these baguette melts. Fluffy white baguettes make the perfect base for classic pizza toppings - these are loaded up with a simple tomato and basil sauce, melted mozzarella, pepper, onion and spicy chorizo, but you could add your favourite pizza toppings as you like. Ingredients
- 1 baguette
- 4 tbsp tomato purée
- 180g passata
- 2 garlic cloves, crushed
- 2 tbsp finely chopped basil, plus extra leaves to serve
- 1 small red onion, chopped
- 1 red pepper, chopped
- 80g chorizo slices, chopped
- 150g pack mozzarella, drained and sliced
If you don't have red onions, try using white, brown or spring onions

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Cut the baguette into 4, then split each piece lengthways to create 8 halves. Place on 2 baking trays.
- Mix together the tomato purée, passata, garlic and chopped basil until well combined, then spread some over each baguette half.
- Top with the onion, pepper, chorizo and mozzarella, dividing them equally across the baguettes. Bake for 12 mins or until the mozzarella has melted and is just turning golden. Season with black pepper and scatter with a few basil leaves to serve.
