Wake up to these gorgeous banana waffles - you don't even need a waffle iron to make this sweet breakfast treat! This clever recipe shows you just how easy it is to make light, fluffy waffles using just a griddle pan. See method
Ingredients
- 250g self-raising flour
- ½ tsp baking powder
- 1 tbsp caster sugar
- 1/4 tsp ground cinnamon
- 2 medium eggs
- 300ml (1/2pt) semi-skimmed milk
- 100g butter, melted and cooled
- 1 large ripe banana, mashed
- 200g Greek yogurt
- 1 orange, zested, 1/2 juiced
- 1 tbsp sunflower oil
- 3 tbsp maple syrup
- 1 tbsp icing sugar
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method
- Sift the flour, baking powder, caster sugar, cinnamon and 1/4 tsp salt into a large bowl. Stir to combine.
- In a jug, beat the eggs with the milk, butter and banana until just combined. Pour the wet ingredients onto the dry and fold in until just combined. Leave to rest for 5-10 minutes.
- Meanwhile, put the yogurt, orange zest and juice in a bowl. Stir until combined; set aside. Put a nonstick griddle pan over a medium-high heat. Add the sunflower oil and tilt to coat the pan. Pour in the batter and reduce to a medium heat. Cook for 5 minutes or until golden. Gently slide the waffle onto a plate, then put the pan upside down over the waffle. Carefully invert the plate to turn the waffle over in the pan. Cook for a further 5 minutes, or until golden and cooked through. If you don't feel confident about turning the waffle, pop it under a medium grill for 5 minutes, or until golden.
- Turn out onto a serving plate and cut into 6 pieces. Spoon over the orange-flavoured yogurt and maple syrup. Dust with icing sugar to serve.
Tip: For a great pudding, swap the yogurt and maple syrup for warm chocolate sauce and vanilla ice cream.
