The bee’s knees really is the bee’s knees. An American-style gin cocktail from the prohibition era, this elegant drink is made with lemon, honey and gin – giving the perfect balance of sweet and sour. Serve chilled with a twist of lemon zest, or try our lemon gin fizz option below (see Tip). See method

- ice cubes
- 200ml gin
- 4 tbsp clear honey

Method
- Use a vegetable peeler to pare off thin strips of zest from one of the lemons, set aside to garnish. Squeeze the juice from all the lemons into a small jug – you will need about 8 tbsp (120ml).

- Fill a cocktail shaker with ice and add the measured lemon juice, gin and honey. Shake well to combine.
- Strain into 4 cocktail glasses and garnish with the reserved lemon zest to serve.
Tip: This cocktail is traditionally served short but you can turn it into a lemon gin fizz for a special occasion. Simply divide the above between 6-8 glasses and top up each glass with Prosecco.
