There's no two ways about it: gin and fresh lime go perfectly together. This whimsical cocktail combining sweet sugar syrup, fresh lime juice and gin, gives you a cool and refreshing drink that’s a real crowd-pleaser. If you want to make more than 4 servings, double or triple the syrup recipe and keep it in the fridge for up to 3 weeks until needed. See method
Ingredients
- 4 tbsp caster sugar
- 65ml (2 1/2 fl oz) gin
- 4 limes, squeezed
If you don't have any limes, try a lemon instead

Method
- Start by making the sugar syrup. Put the sugar in a small saucepan with 60ml water. Gently heat through, stirring, until the sugar dissolves.
- Bring the mixture to the boil and simmer for 1 minute. Cool completely. The syrup will keep, covered, in the fridge for up to 3 weeks.
- Make 2 cocktails at a time. Fill a cocktail shaker or large lidded jar with a small handful of ice.
- Add half the gin, half the sugar syrup and half the lime juice. Shake well and strain into 2 martini glasses. Repeat to make 2 more cocktails.
