Drizzle over ice cream, panna cotta or cheesecake, enjoy on porridge or pancakes for breakfast, or stirred through yogurt for a healthier treat. - 400g strawberries, hulled and quartered
- 80g caster sugar
- juice of 1 lemon

Method
- Put the strawberries (or any summer berries), caster sugar and lemon juice in a saucepan over a medium-high heat and bring to a simmer, stirring constantly.
- Reduce the heat to medium and simmer for 12 mins or until thickened and broken down, stirring occasionally. Remove from the heat and leave to cool completely.
- Use a stick blender to blitz until smooth, then pass through a sieve into a clean jar or sealable container and store in the fridge for up to a week. Serve drizzled over ice cream, desserts or breakfasts.
