It's time to get fruity with this speedy summer dessert where strawberry flavours takes centre stage. Fresh strawberries, crunchy meringues and a drizzling of coulis make this a summer berry dessert like no other. Add a crumbling of shortbread for a superb texture contrast that will have you making this again and again. See method
Ingredients
- 1½ x 900ml tubs strawberry & cream ice cream
- 400g punnet strawberries, finely sliced
- 8 mini shortcake bites (from a 20-pack)
- 8 Tesco Finest strawberry & cream meringue shells (from a 12-pack)
- 8 tbsp Tesco Finest raspberry coulis
- 40g white chocolate buttons

Method
- Divide the ice cream between 8 small bowls or glasses, putting 2 small scoops in each, and scatter over the strawberry slices.
- Crumble over a shortcake bite and place a meringue shell on each, then drizzle with 1 tbsp raspberry coulis and top each with 5 chocolate buttons to serve.
