Kids will love this super simple pasta salad recipe made with orzo, broccoli and cherry tomatoes. You can add any of your children's favourite vegetables, try peas, sweetcorn or green beans. See method
Ingredients
- 150g orzo
- ¾ head of broccoli, trimmed into small florets and the stalk, peeled and cut into cubes
- 100g cherry tomatoes, halved
- ½ lemon, zested and juiced
- 2 tbsp olive oil
- 20g grated Grana Padana

Method
- Simmer the orzo in a large pan of boiling water for 10 mins until cooked through, adding the broccoli for the last 3 mins, then drain.
- Tip back into the pan and add the cherry tomatoes, lemon zest and juice and olive oil.
- Mix well and serve with cheese sprinkled on top.
