Cajun spiced pork with corn recipe

Ingredients
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 x 660g pack pork loin steaks
For the sweetcorn salad
- 2 x 325g tins sweetcorn, drained
- a few cherry tomatoes, to garnish
- 1 x 31g pack coriander, chopped
- 1 red onion, chopped
- 1 tbsp extra-virgin olive oil
- 1 tsp chilli powder
If you don't have any limes, try a lemon instead

Method
- To make a marinade for the pork, combine the Cajun seasoning, olive oil and the lime juice in a bowl. Give everything a good stir until the mixture resembles a loose paste. Add the pork steaks and toss in the mixture until coated. Cover and chill until needed.
- Heat a griddle pan over a high heat. Cook the pork for 4–5 minutes each side, or until cooked through.
- To make the salad, put the sweetcorn, cherry tomatoes, coriander, red onion, extra-virgin olive oil and chilli powder in a bowl and toss to combine. Serve the sweetcorn salad with the hot pork steaks.
