Cajun-spiced veg-stuffed fajitas recipe

When you need dinner on the table fast, these veggie fajitas are just the ticket. See method
Ingredients
- 1 tsp vegetable oil
- 3 mixed peppers, deseeded and cut into 2cm strips
- 2 large red onions, thinly sliced
- 400g tin black beans, drained and rinsed
- 2 large garlic cloves, finely crushed
- 1 tbsp Cajun seasoning
- 1 medium, ripe avocado
- 1 lime, zested and juiced
- 8 Tesco mini plain tortilla wraps
- 1 Little Gem lettuce, finely shredded
- 200g pot Tesco mild salsa
- 50g Tesco Free From Coconut Oil Alternative To Mature Cheddar, coarsely grated
If you don't have red onions, try using white, brown or spring onions

Heat the oil in a large frying pan over a high heat. Add the peppers, onion, black beans, garlic and Cajun seasoning and fry for 6-8 mins, tossing occasionally, until piping hot and starting to soften.

Meanwhile, mash the avocado, lime zest and juice together until it forms a rough paste. Season with black pepper to taste.

Warm the tortilla wraps and fill with the little gem, spicy vegetables, smashed avocado, salsa and a sprinkle of vegan cheese.
