Super speedy to prepare, this elegant and refreshing Christmas cocktail combines the aromatic, bitter flavour of Campari with fruity pomegranate and punchy prosecco. Add fresh mint sprigs for a burst of colour. See method
Ingredients
- 2 large handfuls ice
- 125ml (4fl oz) Campari
- 125ml (4fl oz) pomegranate juice
- 300ml (1/2pt) prosecco or sparkling wine
- 1 x 80g pack pomegranate seeds
- 4 sprigs mint

Method
- Divide the ice between the 4 glasses.
- Pour equal measures of Campari into each glass, top with pomegranate juice then fill to the top with proseccco.
