If you're looking for a healthy and delicious way to get more root vegetables into your diet, switch up your standard mashed potatoes at your next roast dinner for this carrot and swede mash. See method
Ingredients
- 500-600g carrots, peeled and cut into 1cm slices
- 1 swede (about 700g), peeled and cut into 1cm cubes
- 50g softened butter (or 2 tbsp olive oil, to make it vegan)
- 10g fresh thyme, leaves picked and chopped, plus a few leaves to serve
- ½ lemon, zested

Method
- Simmer the carrots and swede over a medium-high heat for 30 mins until the swede is tender when pierced with a fork. Drain well and return to the pan.
- Meanwhile, mash the butter with a fork in a bowl (or pour in the oil), then add a few grinds of black pepper, the thyme and lemon zest.
- Blitz the carrot and swede with a stick blender to a smooth mash. Stir in half the butter or oil, then top with the remainder and a few extra thyme leaves to serve.
