Ingredients
- 35g salted butter
- 1 small onion, finely diced
- 25g plain flour
- 50g porridge oats, plus 1 tsp
- 50g Double Gloucester with onion and chives, coarsely grated

Method
- Preheat the oven to gas 5, 190°C, fan 170°C. Put the butter and onion in a microwave-safe bowl and microwave on medium-high for 2-3 mins or until the butter has melted and the onion has softened.
- Mix the flour, oats and half the grated cheese in a large bowl and add the onion mixture. Season and mix really well.
- Line a 15 x 20cm baking dish with nonstick baking paper. Tip the mixture into the tin and press down firmly to compact the mixture. Top with the remaining cheese and 1 tsp oats.
- Bake for 20-25 mins until the flapjack is just golden and the cheese has melted. Leave to set and cool for 10 mins before turning out and cutting into 4 bars. Will keep for 2 days in an airtight container in the fridge.
Cook's tip: Cheddar would also work brilliantly here.
