These cheesy bites are a great way to get a lot of taste when you are pushed for time and pennies, which means you can make batches of these allowing more time spent with your loved ones. See method
Ingredients
- 120ml (3¾fl oz) whole milk
- 60g butter
- ½ tsp salt
- 125g (4oz) plain flour
- 2 eggs, lightly beaten
- 125g pizza cheese (grated mozzarella and Cheddar)
- 25g (1oz) Parmesan, grated
If you don't have any Cheddar, try using another hard cheese

Method
- Preheat the oven to gas 7, 220°C, fan 200°C.
- Line two baking trays with nonstick baking paper.
- Put the milk, butter and salt into a medium pan and heat gently until the milk just begins to bubble and the butter has melted. Remove from the heat and add the flour; beat with a wooden spoon until you have a smooth dough. Return to the heat and cook for a further 2 minutes, stirring all the time. Remove from the heat and allow to cool for 3-4 minutes.
- When the dough is cool enough to handle, season with freshly ground pepper and add ¼ of the beaten egg mixture, stirring well with a spoon until fully incorporated. Stir in another ¼ of the egg mixture. Repeat until all the egg mixture is incorporated.
- Mix in the pizza cheese and half the Parmesan. Spoon the mixture into a piping bag with a round medium-sized nozzle. If you don’t have one, use a freezer bag and snip off the corner.

- Pipe 2½cm (1in) circles of dough onto the baking trays – ideally they should be around 2½cm (1in) tall. Sprinkle over the remaining Parmesan and cook for 15-20 minutes, or until golden brown.
