Fresh crab is one of life's great luxuries and this salad carries its gorgeous taste even further. Made with zingy lime, capers, tabasco and soft avocado, it's dip-like texture is perfect for scooping up in little gem lettuce leaves. See method
Ingredients
- 225g mixed prepared crab meat (2 half-shells)
- 4 small gherkins, finely chopped
- 1tbsp capers, chopped
- 1tbsp finely chopped fresh coriander leaves
- 2tbsp fresh lime juice + 1tbsp finely grated lime zest
- 1 shallot, finely chopped
- 2 pieces of celery, sliced
- 1 ripe avocado, cut lengthwise and sliced
- 1tbsp dry white wine
- 1tbsp light olive oil
- a few drops of tabasco sauce
- salt, to season
- freshly ground black pepper, to season
- a few crisp salad leaves
If you don't have any limes, try a lemon instead

Method
Fresh crab is one of life's great luxuries and this salad carries its gorgeous taste even further. Made with zingy lime, capers, tabasco and soft avocado, it's dip-like texture is perfect for scooping up in little gem lettuce leaves.
- Combine all the ingredients in a bowl, and then divide the mixture into two.
- Take each quantity, pile it on a plate and use your hands to form it into a round, flattened shape about 1cm high.
- Garnish with some crisp salad leaves all round.
