These cucumber sushi bites are the perfect snack or appetizer when hosting friends and family, but they're more than eye-catching and delicious – they provide 2 of your 5-a-day too. Tuck in! See method
Ingredients
- 2 large cucumbers, cut into 2cm rounds
- 60g Tesco Finest finely sliced Wiltshire cured ham, torn
- 1 ripe avocado, cut into 1cm chunks
- 1 carrot, peeled and coarsely grated
- ½ x 110g tin Tesco tuna steak in spring water, drained
- 30g tinned sweetcorn, drained
- 2 tbsp light mayonnaise
- 1 red pepper, cut into 1cm thick chunks
- 50g smoked salmon, torn
- 1 spring onion, thinly sliced
- 1 tsp sesame seeds
- 2 tbsp reduced-salt soy sauce

Method
- Use a small circular cookie cutter or a serrated knife to remove the seeds from the cucumber. Save the seeds to toss through a salad.
- Divide the cucumber rings into three. Fill a third of the cucumber with ham, some avocado and carrot. Mix the tuna with the sweetcorn and mayonnaise and use to fill a third of the cucumber, along with some pepper and carrot. Finally, fill the remaining third with smoked salmon and any remaining avocado and pepper.
- Arrange on a platter and sprinkle with spring onion and sesame seeds. Serve with a dipping bowl of soy sauce.
