These "sushi" wraps come together in 5 minutes and kids will love them. Filled with ham, cheese and carrots, they're great for lunchboxes or on-the-go snacks. See method
Ingredients
- 1 small carrot, grated
- 40g 50% reduced-fat mature cheese, grated
- 40g iceberg lettuce, shredded
- 30ml honey mustard dressing
- 2 tortilla wraps
- 8 slices of wafter thin honey roast ham slices

Method
- In a large bowl, mix together the grated carrot, cheese, lettuce and honey mustard dressing.
- Lay a tortilla wrap on a large plate. Place 4 slices of the wafter thin ham out evenly across the wrap, then spoon half of the carrot, cheese, lettuce and honey mustard dressing mixture on top. Use the back of the spoon to evenly spread it out across the ham.
- Tightly roll the tortilla wrap from one side to another, then use a sharp knife to slice it evenly into 2 inch ‘sushi’ rolls. Repeat the process with the second wrap.
- Store in a lunchbox or serve immediately.
