Ingredients
- 40g shelled pistachios, finely chopped
- 30g walnuts, finely chopped
- 50g classic 74% dark chocolate, broken into chunks
- 40g dried cranberries
- 20 medjool dates

Method
- Add 30g pistachios and the walnuts to a frying pan set over a medium heat and fry for 3-4 mins, tossing frequently, until lightly golden and fragrant. Remove from the heat and add the chocolate and cranberries to the pan; stir until melted and evenly coated.
- Cut a slice down the length of each date and remove the stone. Fill with the chocolate mixture, sprinkle with the remaining 10g pistachios, place on a plate and chill in the fridge for 15-20 mins until the chocolate has just set. Store in an airtight container for up to 2 weeks.
