Inspired by the classic dark and stormy cocktail, this Christmas version uses ginger syrup for extra festive flavours. Try serving this up at your next Christmas party to show off your cocktail making skills. See method
Ingredients
- 8 tsp lemon & lime marmalade
- 400ml spiced rum
- 4 tsp stem ginger syrup (from a 350g jar), plus 1 stem ginger ball sliced into 8
- 5 limes, 4 juiced (about 160ml), 1 sliced into 8
- ice cubes
- 1ltr ginger beer
If you don't have any limes, try a lemon instead

Method
- Put the marmalade in a heatproof jug or bowl and add a splash of boiling water, mixing to loosen to a smooth, pourable consistency.
- Put in a jug with the rum, stem ginger syrup and lime juice; chill until ready to serve.
- Half-fill 8 highball glasses with ice and divide the mixture between them.
- Top up with the ginger beer and garnish with a lime wheel and a slice of stem ginger to serve.
